Daniel Sequeira Fogaça
My name is Daniel Sequeira Fogaça, I have been working in Japanese cuisine for more than 16 years.
My training started when I was 14 years old, because since I was little boy I always loved Japanese cuisine. I started doing it informally at home for family and friends in Brazil. At age 17 I traveled to Portugal and there I started working professionally, where my teacher taught me the respect for food, the value of it and the satisfaction that comes from preparing it with love to delight the most demanding palates.
When I was 20 years old I came to Spain, so there were not many Japanese restaurants around here. I spoke with a chef from Alicante and set up the "Sushi 56". It was a success and since then I began to delight people who barely knew those flavors and were very reluctant to raw fish. Little by little they accepted that concept and acquired a taste for it.
Since then I have traveled to several cities in Spain, such as Denia, Benidorm, Murcia, Cabo de Palos, Valencia and Torrevieja. Always in leading restaurants of Japanese cuisine such as Enso sushi, Mochi Mochi, Maguro Ya, Samuray, Isushi and La Fusion.
Now in 2018, I have decided to set up my own restaurant: UMAMI is the new trend in Torrevieja, together with my partner Marc Werner Tretter, we have created a warm, cozy and very select space for lovers of fusion Japanese cuisine and all its varieties.
